Thai Peanut Sauce

This is a simple and versatile Thai inspired peanut sauce that can be used for a stir fry, noodles, pizza, dipping vegetables, or as a salad dressing.

Ingredients:
- 1/2 cup Peanut Butter (creamy, all natural peanut butter)
- 1/4 cup rice vinegar (see note below)
- 1/4 cup low sodium tamari or soy sauce
- 2 Tablespoons toasted sesame oil
- 2 Tablespoons honey or maple syrup
- 2 teaspoons minced fresh ginger
- 2 teaspoons minced garlic
- 1 Tablespoon minced green onion (white and light green parts)
- 1 Tablespoon fresh cilantro leaves, chopped
- 1 Tablespoon lime juice - fresh squeezed is best
- 1/2 teaspoon sambal oelek chili sauce (substitute gochujang or sriracha)

Preparing the sauce:
Combine all ingredients in a large bowl and whisk until smooth and creamy.
Note:
The only difference between seasoned rice vinegar and plain rice vinegar is the addition of sugar and salt as the "seasoning" in seasoned rice vinegar. I prefer to control the sugar and salt additions to my food, so I always use plain rice vinegar.
