South of the Border Healthy Cooking

Flavors from Mexico and South America that are sure to excite your tastebuds and spark your interest in healthy cooking. Growing up as an athlete and a “culinary investigator”, I have been fortunate to travel the world and try a variety of flavors. Some of my favorite flavors come from south of the border, including the flavors of South America and the Oaxaca region of Mexico.

Enjoy the flavors from south of the border. The heat will be kept at a minimum with options to spice it up a little for those who prefer the heat. Upon completion of the class, you will have a better understanding of the traditional flavors that come from south of the border and how they can prepared in healthy ways. After enjoying the flavors, you will leave with a packet of recipes that you can create at home. A healthy 5-course meal based on flavors from Central and South America including more than 10 recipes that you can adapt for a variety of weeknight dinners or special events.
Menu items:

  • Mushroom Ceviche
    A Peruvian dish which is a refreshing take on ceviche made without fish
    Served with homemade baked tortilla chips
  • Arepas
    A thick, stuffed corn based dough from Venezuela that is traditionally fried, but this version is baked for a healthier option
    Filled with roasted plantain and black beans with a sprinkling of a nut based cheese
  • Sweet Potato Enchiladas with Oaxaca style Molé and Avocado Crema
    Mild chile peppers, nuts, seeds, and chocolate make a flavorful mole sauce
    Served with a Bolivian style quinoa Salad
  • Baked Chile Relleno
    Mild roasted pasilla peppers filled with homemade non-dairy cheese
    Served with a tomatillo salsa
  • Picarones Cake
    Picarones are traditional fried spiced pumpkin doughnuts from Peru.
    We will create the same Picarones flavor in a healthy baked cake.

Please note, this class may contain some interactive elements where willing participants have the option to help prepare some of the dishes. Expect to enjoy yourself, have a few laughs, and meet a few new friends!
