BBQ Mushroom Oat Burger  

Finally there is a plant-based whole food burger that is heart healthy and super easy to make. This burger has a great flavor while the oats, walnuts, and mushrooms provide a great texture.

Preparation Method:

Preheat the oven to 400° F

If not already done, wash and dice the mushrooms, chop or crush the walnuts, and dice the onion. Each should be about 1/4 inch in size, or roughly the same size as the oats.

Combine all ingredients in a microwave safe bowl and stir to combine. Microwave the mixture on high for 3 minutes. Remove from the microwave, stir, and let set on the counter for 15 minutes or until cool enough to handle. (See non-microwave alternative method below)

When the mixture is cool enough to handle, form burger patties with 1/2 cup of the mixture, they should be about 4 1/2 to 5 ounces each. Place the patties on a parchment lined baking sheet. The mixture will be sticky, so it may be helpful to slightly wet your hands to shape the burgers. Bake the burgers for 15 to 20 minutes, or until they begin to brown. Remove from the oven and flip the burgers and return to the oven for an additional 10 to 15 minutes.

Serve burgers on sprouted whole grain bread or on whole wheat burger buns with barbecue sauce and you favorite burger toppings. You can top with "Not-Cho Cheeze Sauce" if you are in the mood for a cheeseburger.

Alternate method: Combine all ingredients except the water in a bowl and stir to combine. Bring the water to a boil in a medium pot and stir in the oat mixture. Bring back to a simmer and cook while stirring for 1 to 2 minutes. Remove from the heat and let rest for 15 minutes or until cool enough to handle.

Prior to cooking, the burger mixture can be refrigerated for up to 24 hours either before or after making the patties. Once you have cooked the burgers, they can be refrigerated for up to 4 days or frozen for up to a month in a tightly sealed container. Burger can be reheated in a 400° F oven for 15 minutes, or until they are warmed through. You can also reheat the burgers in a microwave until warm or in a covered non-stick pan lightly sprayed with canola oil over medium heat for about 3 minutes per side.
