Roasted Balsamic Strawberries  

Cooked Strawberries? It may sound crazy, but it is a traditional Italian treat! You really need to try this for a simple dessert.

  • Heat proof shallow baking dish.

    Preparation Method:

    Preheat the oven to 375 F.

    Rinse the strawberries under cold water. Slice the top of the strawberry, removing the stem and caylyx (the green parts) to create a flat surface for each strawberry to stand on it's end.

    Place the strawberries in a shallow heat-proof baking dish, standing each strawberry on the cut end with the tip pointing up (see images below). Drizzle balsamic vinegar over the strawberries until there is about 1/4 inch of balsamic vinegar on the bottom of the baking dish. Top with a little freshly ground black pepper.

    Place the baking dish with the strawberries in the preheated oven and roast for 15 to 20 minute, or until the strawberries begin to soften but are not wilting.

    Remove from the oven and let rest 5 minutes to cool slightly.

    To serve, place 5 strawberries on a plate standing on their cut ends. Use a spoon to drizzle a little of the balsamic vinegar liquid from the baked strawberries over the top. If desired, you can also top the strawberries with additional non-dairy yogurt.
